Vermicelli Shrikhand Cups | Aditi Limaye

Vermicelli Shrikhand Cups

This innovative dessert can be easily made at home & will enhance your style of serving food at home. Shrikhand is a popular dessert made in Maharashtra during festivals. It’s derived from Shir + Khand – Shir or Milk (curd is prepared from milk) + khand or sugar.

Ingredients

200 gm vermicelli, 2 tbsp ghee, 2 tbsp condensed milk, 1-1/2 tbsp powdered sugar, 1 cup hung curd, 1 tbsp warm milk, few strands of saffron, 1/2 tsp cardamom powder, 10-12 pieces of finely chopped pistachios, pomegranate pearls as needed

Method

  • Roast the vermicelli in ghee. Sauté on medium heat till golden brown. Turn off the heat and mix in the condensed milk. Mix well.
  • Cover a small cupcake mould with a plastic sheet. Press down the vermicelli mix into the mould.
  • Shape into a small cup. Refrigerate for 30 mins. Demould the vermicelli cups.
  • Soak a few saffron strands in warm milk for a few mins Take the chilled hung curd and add the pistachios to it.
  • Add the powdered sugar and saffron milk and whisk till light and creamy.
  • Fill the shrikhand into the vermicelli cups.
  • Garnish with pistachios, saffron strands and pomegranate pearls.
