2 egg yolks, 1 teaspoon lime juice or vinegar, ½ teaspoon salt, 1 teaspoon
powdered sugar, ½ teaspoon yellow mustard powder, 1 cup salad oil or olive oil or
any other light oil.
- Place the egg yolks, lime juice or vinegar, salt, sugar, and mustard powder in a blender jar and blend once. (Immersion blenders work best for this.)
- Now add the oil in ¼ cup at a time and blend on low speed until the mayonnaise is thickened.
- Store in a sterilized jar for up to a week in the refrigerator.
