Rasam-Style Nutri Soup

Ingredients:

1 cup mixed sprouts (green gram, soybean, black-eyed peas, moth beans), 1 large tomato, ½ cup curry leaves, 1 drumstick, 2–3 tbsp coriander seeds, 5–6 red chilies, 5–6 peppercorns, 2–3 tbsp grated dry coconut, 2–3 garlic cloves, salt to taste, 1 tsp sugar, butter or ghee.

Method:

Dry roast the coriander seeds, chilies, dry coconut, and curry leaves. You may use a little oil or ghee if needed. Once cooled, add the peppercorns and grind to a smooth powder. Peel, cut, and cook the drumstick; blend into a pulp and strain. Pressure cook the sprouts, tomato, and garlic until soft. Once cooled, blend into a smooth paste.

In a heavy-bottomed pan, combine the paste and drumstick pulp. Add the prepared dry masala powder as required. Pour in 2–3 cups of hot water, along with salt and sugar. Boil for five minutes. Add butter or ghee before serving.
