Grilled Chicken, Healthy Seeds, Lettuce and Avocado Salad

Servings – Number of portions : 4

Cooking Time– 15 minutes

Ingredients:

2 avocados, halved, de-seeded, peeled, and cubed, 2 chicken breasts, Salt and pepper to taste, Crushed herbs (thyme, rosemary, etc.), 2 tablespoons oil, 1 head of lettuce, washed and chopped, 2 tablespoons pumpkin seeds, 2 tablespoons sunflower seeds, 2 tablespoons flax seeds, Lemon juice to taste.

Instructions:

  1. Prepare Avocado : Cut avocados into bite-sized cubes.
  2. Grill Chicken : Marinate chicken breasts with salt, pepper, and crushed herbs. Heat oil in a pan and cook chicken until fully cooked on both sides. Let it rest until cool enough to handle. Cut chicken into cubes similar to the avocado.
  3. Prepare Seeds : In a small pan, toast pumpkin seeds, sunflower seeds, and flax seeds until lightly browned.
  4. Assemble Salad : In a bowl, mix avocado, chicken, lettuce, and toasted seeds. Season with salt, pepper, and lemon juice. Toss gently to combine. Serve immediately.
