Paneer / Chicken Tikka Ragi Jowar Roll

Ingredients:
Tikka Marination: 400g paneer cubes or chicken pieces, 1 tablespoon ginger garlic paste, 1 Juice of 1 lemon, Salt to taste, 1 cup hung curd, 1 tablespoon mustard oil, 1 teaspoon garam masala, 1 teaspoon red chilli powder, 1 teaspoon kasuri methi powder, 1/2 teaspoon black salt.
Roti: 1 cup ragi flour, 1 cup jowar flour, Salt to taste, Hot water (as needed), 1 tablespoon oil.
For Assembly: 4 eggs (for non-veg roll), Salt to taste, Green chutney, Ketchup, 1 cucumber, julienned, 1 onion, julienned, 1 cup cabbage, julienned, 1 capsicum, julienned.
Instructions:
Tikka Marination: In a bowl, mix paneer cubes or chicken with ginger garlic paste, lemon juice, and salt. Let rest for 15 minutes. Mix hung curd, mustard oil, garam masala, red chilli powder, kasuri methi powder, and black salt. Apply this marination to the paneer or chicken and let it marinate for about an hour.
Roti: Mix ragi and jowar flour with salt. Gradually add hot water to form a dough. Add oil to make the dough soft and pliable. Portion and roll out the dough to form rotis. Cook the rotis in a heavy-bottomed pan.
Non-Veg Roll: Beat eggs with salt. Pour the egg mixture into a heated pan. Once half-cooked, place a roti on top and finish cooking.
Assemble Roll: Spread green chutney and ketchup on the rotis. Top with julienned cucumber, onions, cabbage, and capsicum. Add the tikka and roll tightly. Serve with green chutney and ketchup.
